Knitting substitute yarn?

I have a simple knitting pattern for a baby blanket that calls for aran cashmere wool on 5mm needles. I would like to substitute the wool for double knit acrylic yarn. What size needles should I use to get a similar thickness. Also is it worth knitting 2 strands of the double knit to achieve the thickness and how do I do this? Sorry, beginner here!!

Substituting the DK acrylic yarn should work fine.

The first step in a project is usually to work a gauge swatch. There are several reasons:
1. In a pattern that has to fit a body, it is essential to match the gauge stated in the pattern, or the garment will not fit.
2. Even if fit isn’t an issue, such as in a baby blanket, you still want to feel the finished fabric to make sure the texture is right–not too stiff, not too limp, that sort of thing.
3. When you’re substituting yarn, you want to make sure the substitute yarn works well with the pattern.
4. And if the Stitch Pattern is new to you, you want to be sure you have mastered the stitch pattern before you start the project so the entire project looks “right.”

DK yarn is usually rated for 3.75 mm to 4.5 mm needles. I would try the 4.5 mm needles with one strand of the DK acrylic yarn and see how close the gauge (the number of stitches in 4″ or 10 cm and the number of rows in 4″ or 10 cm) is to the pattern gauge. Considering the texture difference between cashmere or a cashmere-Wool Blend and acrylic, you could actually get gauge and a fabric you like.

If you need to use 2 strands of the acrylic to get the same gauge as with the cashmere, just take 2 skeins or balls of the yarn, pull out the working yarn, and hold the 2 ends together while you work.

Summary:
1. Baby blankets don’t have to fit. If it comes out a bit larger or a bit smaller than the pattern, it will still be used and loved.
2. Knitted fabric is a function of the yarn, the Needle Size, and your knitting tension. You can’t change your tension easily if at all. Once you’ve selected the yarn, your choices are using 1 single strand or 2 strands. The one thing that is easy to change to get a fabric you like is the needle size.
3. Use the needle size that gives you a fabric you like.
4. If you want to double the yarn, just hold the two ends together and knit them as though they were one yarn.
